A leg of lamb is de boned and butterflied open with excess fat being removed and then whilst being completely opened out a light sprinkle of our delicious gyro seasoning is applied and the lamb leg is carefully rolled back into its original shape with a little more seasoning added to the top and bottom.
We then place this in a cryovac bag where we add a little bit of olive oil to help the marinade infiltrate the meat. This is great on the BBQ cooked like a big steak or in the oven, another favourite is to cook and slice up the meat and make tortilla wraps with Greek yoghurt mmmmmmm
