BBQ steak is cut from a primal cut off the hind quater of a cow called a topside.  this particular cut is used because of its leanness and quickness to cook through once it has been run through our tenderiser.  We have three flavours that we sell yet you could make up your own at home.  ideal cooking is pan fry or bbq for 3 mins either side.
