We are bringing together the best BBQ brands, teams & caterers for a one off event to be held at Kellys Meats on Sunday the 24th of March 2024.
The class presented by Kellys Meats will be hosted by Ado Mac from Butchers Axe BBQ along with Swanny, we will also have Slow Burner BBQ, Moist BBQ & All The Smoke BBQ just to mention a few.
What’s on the menu?
*Whole hog in the offset trailer smoker.
*Wagyu Briskets cooked in one of the offset smokers.
*Tomahawk Steaks hung in the drum smoker.
*Wagyu steaks reverse seared on the weber.
*Pulled Lamb Shoulder.
*Chicken & Lamb Gyros on a jumbuck rotisserie.
*Pichana (Rump Cap) over hot coals with chimi churi.
*Juicy Pork Ribs in the drum smoker.
*Hot & Fast Wings.
*Alabama Fried Chicken.
*Kelly’s meats famous flavoured sausages & Kabana.
*Various other cuts will also be cooked on the day and yes, you get to eat all of it !!!!
Learn how to –
Trim a brisket, season meats, fire management of jumbucks / offset smokers / drum smokers / webers and pellet grills, probe for doneness and cook from start to finish various cuts.
Every Protein is covered extensively with flavour profiling, when to wrap, what to add to a wrap, shutting down a lot of myths.

Kelly’s Meats – Victoria’s home of low and slow American style BBQ!.
The class will run from 9am until 3:30-4pm Sunday the 24th of March at Kellys meats 96-98 south gippsland highway Tooradin. We will have exclusive special offers available in store on certain cuts for the day for people attending the class which will be confirmed the week of the event.
Dane will be available through out the day for a chat, photos and autographs with in reason during breaks through out the day. Refreshments are provided and everything that is cooked will be served through out the day finishing with the whole hog. If there are leftovers you are more than welcome to take some home. If you would like to take notes please bring a pen and paper.
